Low Carb Broccoli Salad

January 1st is approaching and soon every platform will be smothered & covered with magic pills, wraps and products.

Y’all don’t need any of that. Just eat real food. No need for expensive shakes, bars or products. I’m not anti products but if you’re just starting out. Just eat real food that’s low carb. You need to establish a healthy routine before consuming all the keto products. Then once you do, It’s all about moderation.

Anywho!!! Here’s a simple recipe. My favorite kind.

Ingredients

  • 2/3 cups of fresh broccoli
  • 1 cup of dukes mayonnaise
  • 1 cup of cheddar cheese
  • splash of apple cider vinegar
  • sweetener to taste

Instructions

Just mix it all up and let it set in fridge for a few hours before serving.

You can also add sunflower seeds for an extra crunch.

Count Your Blessings

Man oh Man!!! What a year 2020 has been ya’ll. I am a very bubbly person by nature but this year has even taken a toll on me. Lately, I have found myself having to put forth much more effort than I did in the past to keep my positive mindset. Maybe that’s you too, so let’s help each other.

Wherever you find yourself today, I hope that you can take a second to realize how truly Blessed we all actually are despite our stressful moments. Today, I caught myself starting to have a meltdown. Correction, I had a meltdown. I had a meltdown for like the 3rd time this week. I work from home and have for years and I am thankful for that however now, with the pandemic. my husband and son are also home.  This time is STRESSFUL.

I wanted to complain, and boy did I, to a good friend, Bless her heart. I poured it all out. Then, I made myself sit down and write a list of what I am thankful for. As cliche as it sounds, it worked. Let me tell you, I was not happy doing it, but I did it. Stink face and all. As I wrote my list of things I was thankful for, I felt kinda silly about all the things I had convinced myself were a big deal. Yes, it may be a big deal right now, but in the grand scheme of things. It’s not. Write your list friends. Sometimes, it helps to see a visual of all the things we can still be thankful for.

 

 

Low Carb Hot Chocolate

This time of year, I always crave hot chocolate. In the past, I stressed about the sugars in it   but now, I finally have the perfect replacement without all the carbs and sugar.

Ingredients

1 scoop of Key Nutrients Cocoa MCT powder https://keynutrients.com/ref/southern.blessed.farmlife/

8 oz low carb milk ( I like carbmaster brand from Kroger) You can also use almond milk.

whipped topping and chocolate syrup are optional

Instructions

Heat milk your preferred method and add 1 scoop of the Cocoa powder and mix together until smooth.

Low Carb Chocolate Cherry No Bake Cheesecake

I am not a baker. Anyone that knows me well knows that.

If I sign up to bring a dessert to a function, you can bet your money it’s going to be 3 things.

  1. A no bake dessert of some kind
  2. Include cream cheese
  3. Gonna be delicious

 

Here is my latest creation

Ingredients

1 can of Walmart brand no sugar added cherries
4 oz Kerrygold butter
8 oz cream cheese
8 oz sour cream
24 oz heavy whipping cream
sweetener to taste (I use about 4 tablespoons)
1.4 oz box of Jello Sugar Free Chocolate pudding
Hershey Chocolate Sugar Free Syrup optional to add with pudding layer

Instructions

Crush cookies and combine with melted butter

Place cookie mixture in a pie dish and spread out to cover dish

Use stand or hand mixer to combine pudding and 2 cups of heavy whipping cream. Optional to add Hershey Chocolate Sugar Free Syrup

Add over cookie layer in your pie dish

Use stand or hand mixer to combine heavy whipping cream, cream cheese, sour cream and sweetener

Carefully add cream cheese mixture over your chocolate pudding layer on your pie crust

Top your cheesecake with the canned cherries and let chill in the fridge for a few hours before serving
