Low Carb No Bake Cherry Cheesecake

Ingredients

3 packs of highkey chocolate cookies
6 oz kerrygold butter
8 oz cream cheese
8 oz heavy whipping cream
sweetener to taste (I use about 4 tablespoons)
1 can of no sugar added cherries

Instructions

Crush cookies and combine with the melted butter

Place cookie mixture in a pie dish and spread out

Use stand or hand mixer to combine heavy whipping cream, cream cheese and sweetener. 

Add cream cheese mixture over your pie crust.

Top your cheesecake with the canned cherries and let chill in the fridge for a few hours before serving.

 

Smoked Pork Green Chile Stew

We’ve been making this recipe for years with ground beef or some other sort of beef but a few years we had leftover smoked pork shoulder and we used that instead and we haven’t made it with beef since! You could easily use any beef or even chicken if you wanted to but the smoked meat flavor just sets this recipe up over the top.

Ingredients

  • 1-2 pounds of smoked pork shoulder/chicken/beef etc. (make this recipe your own)
  • 3 cans of pinto beans
  • 1 can of black beans
  • 1 can of tomatoes and green chilies
  • 1/2 clove of garlic
  • 2 cans of green chilies
  • 1 pkg of white chili mix
  • 1-2 cups of diced potatoes
  • salt/pepper to taste
  • Optional toppings: cheese, sour cream, tortilla strips.

 

Instructions

Brown or smoke whatever meat you choose

Add ingredients into slow cooker and cook on low for 6-8 hours.

Smoked Queso

This recipe is pretty simple, what you see is what you get lol. You can customize this and tweak this recipe to whatever you have in your house or whatever you want to put in it lol. I’ll post what I used below.

Ingredients

  • 1 lb sausage
  • 1 lb hot sausage
  • about 4-5 jalapeños
  • 2 cans of rotel
  • 1/2 block of cheddar cheese
  • 1/2 block of queso
  • 1/2 block of pepper jack cheese

Instructions

I cooked the sausage and drained the fat off then just threw all the ingredients in the pan and cooked until all the ingredients were melted together. There really isn’t a set time for this recipe but obviously the longer you let it smoke, the more intense smoke flavor you get. I let it cook low and slow for like 8 hours.

Low Carb Hershey Chocolate Cream Pie

My son Landon’s favorite dessert is Edward’s Hershey chocolate cream pie that you can buy from the freezer section and it’s loaded with sugar so I was inspired to make my own (a lower carb version)

This is a 3 layered dessert and it’s heavenly. Tastes better than the pie from Edwards.

Ingredients

  • 3 bags of highkey chocolate cookies
  • 3 tablespoons of kerrygold butter
  • 1 block of cream cheese
  • sweetener of choice (I used organic pyure)
  • 1 box of sugar free chocolate pudding
  • 1 tub of sugar free cool whip
  • sugar free Hershey syrup
  • 2- 2 1/2 cups of heavy whipping cream
  • vanilla extract

Instructions

Before making each layer, allow it to rest in freezer to firm up before each layer.

Start out by melting about 3/4 tablespoons of butter and then crush 2 1/2 bags of highkey cookies and mix with the butter. Press into pie dish.

First layer: combine 1 block of cream cheese and 1 cup of heavy whipping cream into stand mixer and add a splash of vanilla and about 3 tablespoons of sweetener or until sweet enough for you. Mix until fluffy. Add this layer straight onto your pie crust.

2nd layer: combine sugar free chocolate pudding with about 1-1 1/2 cups of heavy cream. I also squirted a little sugar free Hershey syrup in this mixture also to give it a deeper chocolate flavor.

3rd layer: just throw dollops of sugar free whipped cream on it.

Last step: crumble more highkey cookies on it and drizzle with sugar free Hershey syrup. Freeze for an hour or so before serving.
