You Grow in the Tough Times

Embrace and be thankful for your trials, If you’re being tested, you’re being perfected, which means you have a divine purpose and reason to rejoice. God has a reason for allowing things to happen…We may never understand His wisdom, but we have to Trust His will and Be Still.

Whenever trouble comes your way, let it be an opportunity for Joy, for during this time, your endurance has a chance to grow. So let it grow.. for when your endurance is fully developed, your Faith will be strong and ready for anything with God as your strength. Philippians 4:13

God wouldn’t put something hard in your life if He thought you weren’t strong enough to get through it. If He brings you to it, He will bring you through it. You will be tested by major changes, by delayed promises, by unanswered prayers, and even by senseless tragedies. But know all things work together for good for those who love Him. Romans 8:28

These trials are to test your Faith, to show it is strong and pure. It is being tested as fire tests and purifies gold and your Faith is far more precious to Him than gold. Look to Jesus and His promises for His strength, love and the endurance you need. For everyone must be tested. But by trusting God, with your burdens, they become light. By being faithful, to your belief in Jesus. You come forth as Gold.

Blessed are those who remain Faithful under trials, because when they succeed in passing such tests, they will receive as their reward the life which God has promised to those who love Him.

Mamaw’s Peach Cobbler

Every year, my family always get’s a bushel of peaches from Georgia so I always make my Mamaw’s  homemade peach cobbler with some of them. Sharing the recipe because it’s just too good not to share.

Ingredients

  • ½ cup (=1 stick) butter melted to coat dish
  • 2 cups total of truvia sugar, divided into 1 cup each
  • Around 4 cups of peaches
  • 1 Tbsp lemon juice
  • 1 cup all purpose flour
  • 1 Tbsp baking powder
  • ¼ tsp salt
  • 1 cup milk
  • Ground Cinnamon to taste

Side note, if you are using actual peaches from Georgia like me for this recipe, I would cut back on the sugar amount for this recipe to maybe only a cup of sugar because these bad boys are sweet enough on their own without the added sugar)

Instructions

Preheat oven to 375 degrees. Melt butter in your dish for cobbler.

Mix flour, 1 cup of sugar, baking powder and salt in a small bowl. Add milk and mix until just mixed. Pour flour mixture batter into baking dish on top of butter.

Do NOT stir

On stove top, bring peaches, remaining 1 cup of sugar and lemon juice to a boil in a medium sauce pan. Pour peaches over batter and flour mixture in your dish.

Do NOT stir

Bake for 40 – 45 minutes until the top of the cobbler is golden brown.

Sprinkle with cinnamon before serving if desired.

 

Creamy Chicken Taco Soup

I have made this soup numerous times over the years and it always ends up a little bit different because I never measure anything lol. I just wing it. The first time I made it a few years ago was just to use left over chicken I had seasoned with taco seasoning earlier that week because I didn’t want chicken tacos AGAIN lol. Anyway, here is the recipe because today, I finally measured out everything to post here.  I added additional taco seasoning other than what I measured down below but again, just keep testing and add the amount you desire.

Ingredients

  • 3 chicken breasts
  • 16 ounces chicken broth
  • 1 14.5 oz. can of fire roasted tomatoes
  • 1 package of taco seasoning
  • 1 package of ranch seasoning
  • 1 8oz. block of cream cheese
  • 1 4.5 oz. can of green chilies
  • 3-4 tablespoons of roasted red bell peppers
  • salt and pepper to taste
  • optional toppings: avocado, cilantro, tortilla strips, sour cream

Instructions

I cooked mine in my Instant Pot but this recipe can obviously be made on the stove top or slow cooker.

In Instant pot, add in the chicken broth and chicken breasts.

Cook on High pressure for 15 mins or longer depending on size of chicken you’re using.

I let mine slow release for about 10 mins because I was multi tasking.

Take chicken out and shred it and set aside.

I strain the broth the chicken cooked in incase any of the fat came off and add back into the pot.

In your pot, add shredded chicken, taco and ranch seasoning, chilies, fire roasted tomatoes and roasted red bell peppers and stir well.

Cook on soup/stew setting for about 15 mins, once bubbling, add in cream cheese in chunks and cover to melt for a few minutes and it’s done.

I top mine with diced avocados, cilantro and sometimes tortilla strips.
